A Taste of France: French Onion Soup

When you start to think about about France several things usual come to mind, the Eiffel Tower, the Louvre, barretts and especially their cuisine. The French without a doubt are most famous for their food. Tonight I thought I would share a very simple yet very delicious French Onion Soup.

The soup is traditionally placed in speciality bowls and warmed up to have cheese melted in the oven, being that I am a student and do not have these bowls, I came up with an alternative that let’s anybody make this famous soup. By placing the cheese at the bottom of the bowl and then pouring the hot soup on top of it, we can still get that melted cheese and onion mix that makes this soup so great. You might not be a French chef, but once you try recipe you’ll want to make again and again. I know I cant get enough of it!

Before we get cooking you’ll need a few ingredients:

  • 4 cups of onions, 2 large or 4 medium onions make about 4 cups
  • 3 tbs butter
  • 1 tsp sugar
  • 4 cans of beef broth (10 oz)
  • 1/2 cup red wine
  • 1 bay leaf
  • french bread
  • gruyere cheese, about 1 cup grated
  • 2 tbs grated parmesan
  • sliced swiss cheese
  • green onion or parsley to garnish

Directions:

Let’s get started on the soup now.The first step is to peel and slice the onions. You’ll need about 4-4.5 cups of sliced onions, so I hope you’re ready to cry a bit, trust me it’ll be worth the tears.

Once you have your onions chopped, place them in your pot and add your butter and start to sautée them. Add 1 tsp of sugar to help with the browning of the onions.

After about 10-15 minutes on medium heat, your onions should start to brown.

Now that your onions are ready its time to add the broth. Poor in the 4 cans of broth into the pot and add the 1/2 cup of wine.

Add the bay leaf to the pot and cover, let the soup simmer for 25-30 minutes on medium-high heat.

Towards the last 10 minutes, we can start preparing the bread and cheese. Cut the french bread into slices, about 3/4 inches thick and place them in the oven on broil for a few minutes to toast.

Grate the gruyere cheese, you want to get about 1/4 cup per slice of bread. Remove the toasting bread and cover with the gruyere and sprinkle the top with parmesan cheese. Place it back in the oven until the cheese melts and bubbles, this should take about 3 minutes.

When the soup is ready, place a slice of swiss cheese at the bottom of each bowl. Pour the hot soup on top of the slices of cheese.

Once the bread is ready place it in the soup and garnish with a bit of green onion or parsley. Et voilà! You made a beautiful French Onion Soup, enjoy with a nice glass of French wine and bon appétit!
