Thai Peanut Butter Noodles

Peanut butter is one of those things that you just can’t get enough of, I know I can’t! But other than at the breakfast table, there aren’t too many other opportunities to have some during the day. This recipe will give you an excuse to take the peanut butter out of the pantry and enjoy it at dinner time. By using Thai rice noodles and stir fry vegetables along with some peanut butter, you’ll be able to make restaurant quality Thai noodles that you’ll dying to make again.
All you need is to get a few things ready and we can get cooking!
- Udon Thai Noodles, if not available linguine will work too
- 4 tbs sesame oil
- 3 garlic cloves, minced
- 1/2 cup green onions, chopped
- 2 cups frozen stir vegetables
- 1/2 tbs ground ginger
- 1/4 cup honey
- 1/4 soy sauce
- 3 tbs rice vinegar
- 1/2 cup creamy peanut butter, or 1/4 if you dont want the sauce to be thick
- peanut pieces for garnishing
- Sriracha sauce
Directions:
First things first, let’s cook the noodles. Whether you’re using thai noodles or linguine, follow the package instructions and cook them in a pot. Once the noodles are ready, drain them and place them back in the pot. Add 2 tbs of sesame oil and toss to coat and set aside.
In a pan, heat 2 tbs of sesame oil over medium high heat. Add in the green chopped green onions, frozen vegetables, ground ginger and minced garlic.
Sautée the ingredients until they are soft, this should take about 5 minutes.
Next, add the honey, soy sauce and vinegar. Depending how creamy you want the sauce to come out add either 1/4 cup or 1/2 of creamy peanut butter. I like to add 1/2, to give the noodles a rich and creamy taste. Add the peanut butter to the pan and mix well.
Let the sauce simmer for a few minutes. After 3 minutes remove the pan from the heat and pour the sauce into the pot with the noodles. Mix the noodles and sauce well.
And there you have it, you’ve made yourself delicious Thai Peanut Butter Noodles! Sprinkle the crushed peanuts on top of the plate and serve. Goes well with a dash of Sriracha sauce for an added kick!
