British Style Fish ‘n Chips

I’ve been craving a good batch of fish ‘n chips for quite a while now. There have been many great ones that have come along, but nothing I try can beat the gloriously fried golden fish laid out over a bed of chips that I ate in Gibraltar. The only problem is that we all cant make our way over the pond to England or Gibraltar whenever we want fish ‘n chips. So I thought I’d bring the dish out of British pubs and on to your dining room table!

This isn’t a very complicated recipe, and you should have most of the ingredients in your kitchen:

Ingredients:

  • 1 lb cod or haddock
  • 2 cups flour
  • 1 tbs baking powder
  • 1/2 tsp cayenne pepper, for a bit of a kick
  • 1 tsp garlic powder
  • pinch of salt and pepper
  • 2 cups or 1 bottle of English beer, any pale ale will do
  • 3 russet potatoes, peeled and chopped
  • vegetable oil for frying
  • extra flour for dusting

Now that we have all the ingredients, let’s get cooking!

Directions:

The first step is to cut the fish fillets into smaller pieces. Once you’ve cut them down to the size of your liking, dust them off in a plate of flour.

Leave the fillets in the flour while you prepare the chips. Peel and cut the potatoes into nice chunky chips. Rinse and dry them and set them aside.

Next, onto the batter. In a bowl, mix the flour, garlic, cayenne and baking powder. Add a pinch of salt and pepper for seasoning. Make sure to get rid of any clumps in the mixture.

The next step once you’ve mixed it all together, slowly mix in the beer while continuously stirring. Once again I went with my local microbrewery’s brew, an English style Bitter, but you can use any pale ale in the batter.

Keep on mixing the batter until you have a thick batter, almost the type you’d make pancakes with.

In a pan, heat your oil. Next make sure you’ve properly dusted your fish with flour, this will keep the batter from sliding off when you fry it. Coat each piece in a nice thick coat of batter and carefully place them into the pan.

Slowly place the fish into the pan of oil one by one

Fry the fish for about 5-10 minutes until they are a nice golden colour and crispy on the outside. When the fish are done, take them out and place them on plate lined with paper towel to get rid of the extra oil.

Once the fish is doen frying, set it aside on a paper towel lined plate for a few minutes

We’re going to make the fries now. Take the chips that were prepared earlier and place them in the pan with the heated oil. Let them fry for about 3-5 minutes until soft and golden. Remove the fries and place them on a paper lined tray to get rid of any excess oil.

And there you have it! Serve your crispy golden fish on top of a bed of nice warm homemade fries. Place a lemon and some tartar sauce on the side and enjoy!
