Quick Food Fix: Feisty Almonds

This will be my first “Quick Food Fix” posting. What am I talking about? A Quick Food Fix is a great little recipe you’ll love and that will take no time to prepare!

This is a simple recipe that makes a delicious snack that I really enjoy munching on. We’re going to use sea salt, spicy paprika and a bit of olive oil to make some oven roasted almonds with a kick.

Here’s what you’ll need:

All you need for this feisty snack

  • 1 tbs sea salt
  • 1/2 tps spicy paprika
  • 1 tbs olive oil
  • 3 cups blanched almonds, *if not available natural almonds will do see below for additional steps

Directions:

Pre-heat the oven to 400°F.

Spread the almonds on a baking tray and put them in the oven for about 8-9 minutes. We want to get the almonds nice and golden and to have a nice roasted aroma. Be careful, almonds burn easily so watch them carefully around the 7 minute mark.

While the almonds are in the oven, mix the sea salt and paprika together in a small bowl.

Take the almonds out of the oven and place them into a heat proof bowl. Sprinkle the olive oil and mix. You want to be sure there is a nice coating of olive oil on all the almonds. Next stir in the salt-paprika mixture and mix into the almonds until evenly coated.

Serve warm in a bowl and you can store the leftovers in a sealed container.

And there you have it, in about 10 mins you’ve made yourself a very tasty snack!

* If you dont have blanched almonds you can still enjoy this recipe, we’re just going to have to get rid of the almond skin ourselves. Its a fairly simple procedure, but will add a little more time to the preparation of the snack. You’re going to have to place your almonds in a pot with water over high heat until they boil.

Once you’ve boiled the almonds, run them under cold water and they should be able to pop right out of their skin

Once boiled, drain the almonds into a sieve and run through cold water. Once the almonds are cool you can squeeze them and they will pop right out of their skin. Pat dry once peeled and move on to the first step above.
