Since I was talking about craving favorite dishes yesterday, I got myself in the mood for my favorite dish! Ribs! Ever since I could remember my special meal was ribs. Birthdays I’d ask for ribs, graduations or any kind of celebration, there had to be ribs. To me nothing beats my mom’s ribs, but I thought I’d give it a try. I took what she’s taught me and added my own sauce to the ribs to make something really special. Just because ribs is my special meal, it doesn’t mean you need a special occasion to enjoy them too!

To make this dish you’ll be needing a few things that you can easily find in your kitchen.

Sauce Ingredients:

  • 1 tbs olive oil
  • 3-4 garlic cloves, minced or finely chopped
  • 1/2 cup soy sauce, preferably low sodium
  • 3/4 cup ketchup
  • 2 tbs Worcestershire sauce
  • 2 tsp smoked paprika
  • 2 tsp chili powder (or as much as you want)
  • 1 tsp onion powder
  • 1 cup your favorite Porter or Stout (their roasted flavour adds to the sauce)
  • 1/3 cup brown sugar

Your basic sauce ingredients

Ribs Ingredients:

  • Ribs cut into parts
  • 3-4 bay leaves
  • 1/2 tps all spice, you can also use clove
  • 1 dash of salt

Separate the ribs into smaller parts

Alright now that we have everything we need, we’re going to start cook!

Directions:

The first step is to place the separated ribs into a pot of water with the bay leaves, all spice or cloves and a dash of salt. Let the ribs boil for 45 mins to 1 hr. This will make the ribs nice and tender, giving you a “fall off the bone” rib in the end.

In the meantime while the ribs boiling start working on making our sauce the sauce. I like to use the Stout from my local microbrewery, but Guinness would work wonderfully as well.

In a pan on medium heat, pour the olive oil. Once it heats up add in the garlic and let it cook for about 1 minute, you should be able to smell the garlic now. Next stir in the beer and remaining ingredients, mixing them all together. Cook for approximately 15-20 minutes and allow for the sauce to thicken. Let it cool down afterwards.

By the time your sauce is ready, your ribs should be nearly to be put in the oven. Here’s where we get to use the nice sauce we just made! Pre-heat the oven to 385 °F, then lather the ribs with with the sauce.

Sauced up ribs

Place the ribs meaty side up on a baking tray and place them in the oven for 25-30 minutes. Half way through, baste the ribs in the sauce once more. By the end you’ll have nice and tender ribs with a caramelized sauce!

There you have it, Saucy BBQ Beer Ribs ready to be devoured! Serves great with baked beans or double baked potatoes and coleslaw or a salad, but we’ll save all that for another day! Enjoy and dont forget to drink what’s left of the beer, it’ll pair up perfectly with the ribs!
